At Restaurant Kintsugi, we offer an authentic omakase experience in the heart of Barcelona. Our sushi bar, located by the restaurant’s glass frontage at Hotel Ohla Eixample, is the stage where chef Hiroshi Shimamura prepares each piece of sushi in front of you, using traditional Edomae techniques—the classic Tokyo style practiced since the 18th century.

Each omakase experience at Kintsugi is unique. The chef selects the finest fresh fish and seafood, sourced directly from the fish markets of the Ebro Delta: bluefin tuna, prawns, eel, sea bass, oysters, and seasonal products. The maturation of the fish with algae and sake, and the preparation of live eel in the Kabayaki style are two of the techniques that make this experience truly unforgettable.

The Chef

Hiroshi Shimamura is certified as a Sushi Edomae instructor in Japan. After his training in his home country, he has spent more than 20 years in Barcelona perfecting his craft. His cuisine is classical and traditional Japanese, without fusion: absolute respect for the product and ancestral techniques.

Our omakase bar is located by the restaurant’s glass frontage, allowing you to enjoy the experience with natural light during the day and an intimate atmosphere at night. A front-row seat to watch the chef craft each piece.
