Hiroshi Shimamura is the chef leading Restaurant Kintsugi in Barcelona. Certified as an Edomae Sushi instructor, the traditional Tokyo style practiced since the 18th century, Hiroshi trained in Japan before moving to Barcelona, where he has spent more than 20 years dedicated to authentic Japanese cuisine.

His philosophy is clear: classic and traditional Japanese cuisine, without fusions or artificial combinations. Absolute respect for the product, ancestral techniques, and seasonality. Each dish reflects the essence of Japanese cuisine applied to the extraordinary fresh produce sourced from the Ebro Delta.

Among his most notable techniques are the aging of fish with algae and sake, which enhances flavors while preserving the original texture, and the preparation of live eel in the Kabayaki style, a technique that requires years of practice and is mastered by very few chefs outside Japan.
